Southern Roasted Carrots

Serves 14**

14  cups Baby Carrots

1 Tbsp cumin

1 Tbsp smoked paprika

1 tsp cayenne pepper

Salt to taste

Pre-heat oven to 425 degrees F. Rise carrots and place in an ovenproof dish with a lid. Add seasonings and a few tablespoons of water. Cover and bake for 20 minutes or until fok tender.

Allow carrots to sit covered for 1-2 hours to absorb flavors. Reheat prior to serving. Sprinkle with dill and serve.

**To make 4 servings – reduce recipe to 4 cups of carrots and use ½ tsp or cumin, smoked paprika and a pinch of cayenne pepper. Salt to taste. Follow rest of recipe as noted
